Glutinous rice can be used as a substitute for starch (2013/05/27)

The latest food fears are leading to renewed interest in natural food products. Professional homemaker Yang Sian-ying explained how consumers can use glutinous rice in place of processed starch.

Add one to two parts water to cleaned glutinous rice, dumping all contents into a blender.

The glutinous rice needs to be blended to the consistency of soybean milk. It’s best if no granules remain.

The mixture will appear much like potato starch mixed with water. A disadvantage is that glutinous rice is more expensive than potato starch, but homemaker Yang Sian-ying says the advantages are worth the extra cost.

As the glutinous rice thickens it doesn’t settle as much. It is dense, but it doesn’t precipitate. Potato flour yellows and turns to granules as it cools. It precipitates and loses water.

Tainted starch fears have made consumers weary of using this ingredient to thicken soup. Glutinous rice provides a natural alternative.
